Ferme et Forêt

What is this Taste?

Pure Gatineau Hills maple syrup, boiled over wood in an open-air sugar shack. The taste of spring in eastern Canada!

Why should I come try it?

April is the month when the maple sap tends to flow the most, driven by the freeze-thaw cycles of early spring. The maples have stored last summer’s sunshine in their roots all winter, and now they are sending this nourishment up to their swelling leaf buds.

We intercept a small amount of this rich liquid, full of trace minerals and antioxidants, which we then concentrate further in the finished maple syrup, making it probably the healthiest sweetener out there!

Maple Hill Urban Farm

What is this Taste?

Duck eggs taste much like a chicken egg.  Depending upon your taste buds, duck eggs have been described as richer or more creamy.

YOLK -The yolk is larger making more space available for natural     antibodies.

WHITE – Due to a different protein content, the albumen is clear and cooks faster than chicken eggs so cook on low heat.

SHELL – Be prepared to crack a hard shell.  The hard shell is what extends the shelf life of duck eggs.

FREE RANGE – Ducks are better grazers than chickens.

Why should I come try it?

Because duck eggs are healthier for you!

Duck eggs are better than chicken eggs in almost every way. With superior nutritional values compared to chicken eggs: more vitamins, minerals, alkalinity, freshness, allergen safety, caloric energy, protein and even baking perks.

Many people allergic to chicken eggs can eat duck eggs.

Our duck eggs are 50% larger than a large chicken egg.

Baked goods typically rise 20% more with duck eggs.

Dorothy’s Ducks: My Favourite Farm

What is this Taste?

The best tasting chicken, duck, goose and turkey in the Ottawa Valley! It is raised at My Favourite Farm – commonly known as Dorothy’s Ducks, located near Cobden, Pembroke and Eganville.

The birds free range on green pastures all day. They shelter in the woods on hot days and the grain they eat is certified organic grain from Homestead Organics. We raise them for 16 weeks, which is twice as long as the industry standard. That is when they develop the most flavour and just before the meat gets tough.

Why should I come try it?

Try it because it is succulent, delicious local chicken. March is a great time to get it, because they are still available but going fast. We are already sold out of ducks, geese, turkeys, and goat meat! All of these (including chicken) will be available again from September on. In the meantime, when you want a salubrious meal of the best chicken in the Ottawa Valley, treat yourself to a chicken from My Favourite Farm.
